The YMCA of Greater Oklahoma City is committed to helping individuals and families live healthy lifestyles everywhere they go. During National Nutrition Month, we’re sharing some of our favorite recipes to keep your health and wellness journey on track.

The Y feeds thousands of children year-round, so we know how important it is to make mealtime interesting. These recipes are kid-friendly and simple enough that the entire family can join in on making them.

Up first, we’re sharing a favorite straight from the Joplin Family YMCA.

Turkey Panini

Makes 2 sandwiches

Ingredients:

  • 3 tbsp. reduced-fat mayonnaise
  • 2 tbsp. nonfat plain yogurt
  • 2 tbsp. shredded Parmesan cheese
  • 2 tbsp. chopped fresh basil
  • 1 tsp. lemon juice
  • Freshly ground pepper, to taste
  • 4 slices whole wheat bread
  • 8 oz. thinly sliced reduced-sodium deli turkey
  • 8 tomato slices
  • 2 tsp. canola oil

Directions

  1. Combine first six ingredients to make dressing and set aside. Line up four slices of bread, and layer two ounces sliced turkey, one tomato slice, and ¼ dressing.
  2. Top with second slice of bread to form four sandwiches.
  3. Brush both sides of each sandwich with canola oil. 
  4. Heat a frying pan, griddle or panini maker to medium heat. Toast each side of the sandwich until bread is golden brown.
